Kabuli Rice

The name sounds so very peshawari right!! but its actually a recipe from Jodhpur - Rajasthan. I am sure most of you might have never heard about it also, so i took a chance to update you guys with another new recipe.

"Kabuli Rice" does taste good only with long Basmati rice, its flavour and the appreance is so too simple yet this is a very heavy meal. Layers of rice & masala's gives it a wonderful flavour to our taste buds.


Kabuli Rice

So lets start preparing this now, Ingredients are very simple and method too. Hope you guys enjoying while giving it a try.

Ingredients: 

2 Cups of Boiled Basmati Rice
1 Onion Sliced and Deep fried
1 Potato Sliced and Deep Fried
1 Bread Slice - Cut in Cubes and deep fried
1 Tomato Sliced
1 Cup Curd/Yoghurt
1 Tbsp of  Mix Dry fruits of your choice - I preferred Raisins, Cashewnuts
1 Tsp Garlic Paste
2-3 Tbsp Ghee
A dash of Hing
1 Tsp Whole Jeera 
2 Tbsp of Onion and Green Chille Paste
1 Tsp Red Chille Pwd
1 Tsp Tumeric Pwd
1 Tsp Garam Masala

Method:
Head the pan with Ghee then add whole Jeera, when it starts to splutter add the onion & green chilli paste, garlic and fry till they turn golden brown.
Then add the beaten Curd and Dry Masala, heat it till the oil separates.
Add the tomato slices and deep fried potatoes, Onions to the pan, Mix them and let it cook for about 10 mins on low heat.  Add dry fruits at this stage and salt.

The Masala is now ready. So , lets plating it up.


In a large bowl, first put a layer of  basmati rice, then add a layer off bread pieces followed by layer of the masala. continue the process of the layer and then to finish it you can either add saffron  and coriander.
